The Fishers Test Kitchen will be a restaurant accelerator that will function as a food hall within the new Sun King Brewing building at The Yard at Fishers District. There will be three food stands with completely built-out kitchens and prep space. The stands will serve Sun King customers; carry out will also be available.
We’re taking the business and tech accelerator model that’s been so successful at Launch Fishers and the IoT Lab and applying it to food. The Test Kitchen is looking for promising restaurant concepts and aspiring chefs with restaurant experience. Perhaps they already have a restaurant and want to test a new concept. Maybe they are sous chefs who want to run their own place. They could be food truck operators who want a brick-and-mortar location. Launch Fishers will work with these chefs to hone their concept with business coaching and mentorship. Chefs who feel like the accelerator would be a good fit for them can apply here.
Leases will be short term – perhaps 1 to 2 years – to allow the chefs to test their concept and build a following, with the hope that they will eventually open their own restaurant, ideally in Fishers. Rent will likely be structured as a revenue share, with chefs paying a percentage of sales to cover rent, utilities, maintenance charges, and other fees.
Applications for the first group of chefs will be accepted through May at FishersTestKitchen.com. Following the selection of the first group, applications will continue to be accepted on a rolling basis. A board consisting of representatives of the City of Fishers, Launch Fishers, the Test Kitchen and Sun King Brewing will choose the chefs.
Also within the accelerator building will be The Signature Table. This will be a culinary performance space that will accommodate up to about 15 guests seated right in front of the chef for a variety of scheduled, ticketed culinary events: classes, demonstrations, tastings, dinners, etc. The public will even be able to book The Signature Table for their own private events.
